Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown it on all sides. Remove the beef from the pot and set it aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes. Add the carrots, celery, and diced potatoes, and continue to cook for an additional 2 minutes.
  3. Sprinkle the flour over the vegetables and stir well to coat. Cook for 1 minute to cook off the raw flour taste.
  4. Slowly pour in the Guinness beer and beef broth, stirring constantly to avoid lumps. Add the tomato paste, Worcestershire sauce, bay leaves, and the browned beef. Season with salt and pepper to taste.
  5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 20 minutes, or until the beef is tender, and the potatoes are cooked through. Remove the bay leaves and discard.
  6. Taste and adjust the seasoning if needed. Serve the beef and Guinness stew hot, garnished with fresh parsley. It pairs wonderfully with crusty bread or creamy mashed potatoes.
