Instructions

  1. In a large skillet or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan.
  2. Season the beef stew meat with salt and pepper, then add it to the skillet with the bacon fat. Cook the beef until browned on all sides, about 5 minutes. Remove the beef and set aside.
  3. In the same skillet, add the chopped onion, sliced carrots, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  4. Return the beef and bacon to the skillet. Add the red wine, beef broth, tomato paste, and dried thyme. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  5. In a small bowl, mix the flour with the butter to form a paste. Stir the paste into the skillet, and continue to simmer uncovered for an additional 5 minutes until the sauce thickens.
