Ingredients

  • 4 veal cutlets
  • Salt and pepper
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • Chopped fresh parsley, for garnish

Instructions

  1. Season the veal cutlets with salt and pepper on both sides.
  2. Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and a mixture of breadcrumbs and grated Parmesan cheese in the third.
  3. Coat each veal cutlet in flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  4. In a large skillet, heat olive oil over medium-high heat. Add the breaded veal cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  5. In the same skillet, melt butter. Pour in the heavy cream and shredded mozzarella cheese. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Plate your veal cutlets and spoon the warm, creamy sauce over top. 
  7. Garnish the dish with chopped fresh parsley and enjoy! 

Notes

Feel free to tenderize the veal cutlets if they’re too thick. You can also try using panko breadcrumbs for a crunchier coating if desired. Do keep a close eye while browning the cutlets to prevent overcooking. Pair with steamed vegetables or a light salad for a balanced meal and enjoy!
