Instructions

  1. Prepare the blueberry mixture (5 minutes): In a blender or food processor, combine the fresh blueberries, honey (or maple syrup), and lemon juice. Blend until smooth.
  2. Combine with yogurt (5 minutes): In a large mixing bowl, whisk together the Greek yogurt and vanilla extract. Add the blueberry mixture to the yogurt and swirl as desired.
  3. Assemble the pops (5 minutes): Pour the blueberry yogurt mixture into popsicle molds, filling each mold about three-quarters full. If desired, drop a few whole blueberries into each mold for added texture and visual appeal.
  4. Insert sticks and freeze (4-6 hours): Insert popsicle sticks into the molds. Freeze for at least 4-6 hours, or until the pops are completely frozen.
