Ingredients

Units Scale
  • 2 bone-in pork chops
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup bourbon
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 2 ears of corn, kernels removed
  • 1 poblano pepper, diced
  • 1 sprig fresh rosemary, finely chopped
  • 1 cup baby potatoes, halved
  • Edible flowers or micro greens for garish (if desired)

Instructions

  1. Season the pork chops with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Add the pork chops and cook for about 4-5 minutes per side until golden brown and cooked through. Remove the chops from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Stir in the bourbon, brown sugar, and soy sauce. Let the mixture simmer for a couple of minutes until it slightly thickens.
  4. Add the corn, poblano pepper, rosemary, and baby potatoes to the skillet. Cook for about 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
  5. Return the pork chops to the skillet and spoon the bourbon glaze over them. Cook for an additional minute to heat the chops through.
  6. To plate this meal, start with a bed of baby potatoes, followed by the porkchop. Spoon a generous portion of the corn and poblano peppers over the pork and garnish as desired.

Notes

For the best results, make sure to season the pork chops generously with salt and pepper to enhance their flavor. When cooking the vegetables, aim for a balance between tenderness and a slight char for added depth of flavor. You can also experiment with different herbs or spices to personalize the dish to your taste. Pair this delicious meal with a fresh green salad or steamed vegetables for a complete and nutritious dinner. Enjoy!
