Ingredients

Units Scale
  • 12 ounces pappardelle pasta
  • 1 tablespoon olive oil
  • 1 pound ground beef (or a combination of beef and pork)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 can (14 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup beef or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pappardelle pasta in a large pot of boiling salted water until al dente, following the package instructions. Drain the pasta, reserving about 1/2 cup of pasta water, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned and cooked through, breaking it up into small pieces with a spoon.
  3. Stir in the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are tender, about 5 minutes.
  4. Add the crushed tomatoes, tomato paste, beef or chicken broth, dried oregano, dried basil, salt, and pepper. Bring the sauce to a simmer and let it cook for 10 minutes, allowing the flavors to meld together.
  5. Toss the cooked pappardelle with the Bolognese sauce, adding a splash of the reserved pasta water to achieve your desired consistency.
  6. To serve, divide the Pappardelle Bolognese among plates, sprinkle with grated Parmesan cheese, and garnish with fresh basil leaves.

Notes

For a luxurious touch, drizzle some extra-virgin olive oil over the plated pasta. If you prefer a bit of heat, add a pinch of red pepper flakes to the sauce. Don’t forget to taste and adjust the seasonings to suit your palate. Pair this dish with a simple side salad or some crusty garlic bread for a complete meal. Enjoy!
