Ingredients

Units Scale
  • 1 pre-made pie crust, thawed
  • 4 slices of bacon, cooked and crumbled (or other breakfast meat of your choice)
  • 1 cup of veggies such as broccoli florets, spinach, peas, bell peppers, mushrooms, tomatoes, etc
  • 1/2 cup shredded cheese
  • 3 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin or mini tart tins.
  2. Roll out the pre-made pie crust and use a round cookie cutter or a glass to cut out circles slightly larger than the tin holes. Press the circles into the tin to form the crusts.
  3. In a mixing bowl, combine your breakfast meat, veggies, cheese, eggs, milk, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  4. Spoon the filling into the prepared pie crusts, filling each one almost to the top.
  5. Bake the mini quiches in the preheated oven for about 15-18 minutes or until the crusts are golden and the filling is set.
  6. Once they are done, remove the quiches from the oven and let them cool for a few minutes. Garnish with fresh chives if desired and serve.

Notes

Make sure to chop the veggies into small pieces so they cook evenly and blend well with the other ingredients. You can also blanch any of the crunchier veggies for a minute or two if you prefer a softer texture. Feel free to experiment with your favorite breakfast meats, veggies, and cheeses until you find your perfect combination. Pair these mini quiches with a fresh green salad or some roasted potatoes for a complete meal and enjoy!
