Instructions

  2. In the same skillet, add the diced potatoes and cook until golden and crispy, about 8-10 minutes. Season with salt and pepper to taste. Remove the potatoes from the skillet and set aside.
  3. Reduce the heat to low and add the beaten eggs to the skillet. Gently scramble the eggs until cooked to your desired consistency, about 3-4 minutes. Season with salt and pepper.
  4. Warm the flour tortillas in a dry skillet or in the microwave for a few seconds until pliable.
  5. Assemble the breakfast tacos by dividing the chorizo sausage, crispy potatoes, scrambled eggs, and crumbled bacon evenly among the tortillas. Add any optional toppings of your choice.
