Ingredients

Units Scale
  • 4 slices of hearty bread (your choice of bread, like sourdough, French, whole grain, etc)
  • 2 cups canned butter beans
  • 1 cup tomato passata or crushed tomatoes
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 4 large eggs
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until softened.
  2. Stir in the minced garlic, dried oregano, and paprika. Cook for another 1-2 minutes until fragrant.
  3. Add the tomato passata or crushed tomatoes to the skillet, and season with salt and black pepper to taste. Let the sauce simmer for about 5 minutes until it slightly thickens.
  4. Stir in the canned butter beans and let them warm through in the tomato sauce for an additional 3-5 minutes.
  5. While the butter beans are simmering in the sauce, poach the eggs. Bring a separate pot of water to a gentle simmer, and add a splash of vinegar to the water. Crack each egg into a small bowl, and gently slide them one by one into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set, and the yolks are still runny.
  6. Toast the slices of bread to your desired level of crispiness.
  7. To assemble, place a slice of warm toast on each plate. Spoon a generous amount of butter beans in tomato sauce over the toast.
  8. Carefully lift the poached eggs from the water with a slotted spoon, allowing any excess water to drain, and place one egg on top of each plate of butter beans.
  9. Garnish the dish with chopped fresh parsley or chives.

Notes

Feel free to add a sprinkle of grated Parmesan cheese over the butter beans for an extra layer of savory goodness. You can also customize the dish with a dash of hot sauce or some crushed red pepper flakes if you prefer a bit of heat. This recipe pairs wonderfully with a side of fresh salad or sautéed spinach to add some greens to your meal. Enjoy this simple and flavorful dish!
