Instructions

  1. Toss the diced butternut squash in olive oil, season with salt and pepper, and roast in a preheated oven at 375°F (190°C) for about 20-25 minutes or until tender. Set aside.
  2. In a skillet, sauté the diced red bell pepper until slightly softened, about 2-3 minutes. Set aside.
  3. Prepare caramelized onions (see note below).
  4. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and ground nutmeg.
  5. Place the store-bought pie crust into a 9-inch pie dish or tart pan.
  6. Layer the roasted butternut squash, caramelized onions, sautéed red bell pepper, and chopped prosciutto onto the crust.
  7. Sprinkle grated Parmesan cheese and chopped fresh chives over the filling.
  8. Pour the quiche custard mixture evenly over the filling.
  9. Bake in the preheated oven for 35-40 minutes or until the quiche is set and the top is lightly golden.
  10. Allow the quiche to cool slightly before serving.

Notes

To make caramelized onions, thinly slice 2-3 onions and sauté them in butter or olive oil over low heat for about 30-40 minutes, stirring occasionally, until they turn a deep golden brown color and become sweet and caramelized. Feel free to customize the quiche with your favorite vegetables or herbs for added flavor. Serve the quiche warm or at room temperature, garnished with additional chives if desired.
