  • Prep Time: 10 minutes
  • Cook Time: 25-35 minutes
  • Total Time: 35-45 minutes
  • Yield: 6 servings 1x

Ingredients

Units Scale
  • 2 cups shredded rotisserie chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 can (8 count) refrigerated biscuits

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, milk, frozen mixed vegetables, the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Transfer this mixture into a greased 9×13-inch baking dish.
  4. Bake the casserole in the preheated oven for 15-20 minutes or until it’s heated through and bubbling around the edges.
  5. While the casserole is baking, prepare the biscuits according to the package instructions and bake them alongside the casserole but on a separate rack (this helps prevent them from getting soggy). Bake until the biscuits begin to get firm but are not yet golden brown.
  6. Remove the casserole and the biscuits from the oven, and place the biscuits on top of the casserole.
  7. Return the dish to the oven and bake until the biscuits are golden brown.
  8. Serve your delightful chicken casserole with biscuits hot, and enjoy!

Notes

While this recipe calls for mixed vegetables, feel free to customize it with your favorite veggies. Peas, carrots, corn, or broccoli all work well. Fresh or frozen vegetables are both excellent options. Feel free to adjust the seasoning to your taste. Add herbs like thyme or parsley for a flavor boost. Taste the mixture before baking to ensure it’s seasoned to perfection. Be cautious not to overbake the biscuits on top. They can quickly go from golden brown to overly browned. Enjoy!
