  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Cooked egg noodles or rice, for serving

Instructions

  1. In a large skillet or pan over medium-high heat, melt one tablespoon of butter. Add the sliced chicken and cook until it is no longer pink, about 4-5 minutes. Remove the cooked chicken from the pan and set it aside.
  2. In the same skillet, add the remaining tablespoon of butter and sauté the chopped onion until it becomes translucent, around 2-3 minutes. Then, add the sliced mushrooms and minced garlic, and continue to cook until the mushrooms are tender and slightly browned, approximately 5 minutes.
  3. Sprinkle the flour over the mushroom mixture and stir to combine. Cook for another minute to allow the flour to cook out and prevent a raw taste.
  4. Slowly pour in the chicken broth while stirring constantly to avoid lumps. Bring the mixture to a simmer and let it cook until it thickens slightly.
  5. Reduce the heat to low and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Season with salt and pepper to taste.
  6. Add the cooked chicken back to the pan, coating it evenly with the creamy mushroom sauce. Let the mixture simmer for another 2-3 minutes until the chicken is heated through.
  7. Serve the Chicken and Mushroom Stroganoff over cooked egg noodles or rice. Garnish with chopped fresh parsley for a pop of color and added flavor.

Notes

Take your time sautéing the onions and mushrooms, allowing them to caramelize and intensify their natural sweetness. This step brings a depth of flavor to the dish that’s truly delightful. For a slight twist, try incorporating different mushroom varieties like shiitake or oyster mushrooms for an extra layer of earthy flavors. You can also amp up the creaminess by using full-fat sour cream if desired. Enjoy!
