Instructions

  4. Simmer Chicken (20 minutes): Return the browned chicken to the pot. Add chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20 minutes.
  5. Add Vegetables (20 minutes): Add the quartered potatoes, sliced carrots, and red bell pepper to the pot. Continue to simmer until the vegetables are tender.
  6. Finish with Peas (5 minutes): Stir in the green peas and cook for an additional 5 minutes.
  7. Garnish and Serve (2 minutes): Check the seasoning and adjust with salt and pepper as needed. Garnish with fresh parsley or cilantro. Serve the Chicken Afritada hot.
