Ingredients

Units Scale
  • 2 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon chili paste (adjust to taste)
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1/2 daikon radish, julienned
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 4 small baguettes or French rolls, split and toasted
  • Fresh cilantro leaves
  • Fresh jalapeño slices (optional)

Instructions

  1. In a bowl, combine minced garlic, soy sauce, fish sauce, brown sugar, lime juice, and chili paste.
  2. Slice the chicken breasts in half horizontally to create thinner pieces. Place them in a resealable bag or shallow dish, pour the marinade over them, and refrigerate for at least 10 minutes.
  3. In a bowl, combine the julienned carrot, cucumber, and daikon radish with rice vinegar, sugar, and a pinch of salt. Toss well and let sit for about 10 minutes.
  4. Preheat your grill or a grill pan over medium-high heat. Grill the chicken for about 6-8 minutes per side until fully cooked. Remove from heat and let it rest for a few minutes before slicing it thinly.
  5. In a small bowl, mix mayonnaise and Sriracha sauce to create the spicy mayo.
  6. Slice the toasted baguettes in half.
  7. Spread a generous layer of spicy mayo on each side.
  8. Layer the sliced chicken, pickled vegetables, fresh cilantro leaves, and jalapeño slices (if using) on the bread.
  9. Close the sandwich and serve immediately.

Notes

To perfect this Chicken Banh Mi, ensure your chicken is well-marinated for maximum flavor. Don’t be shy with the pickled vegetables – they add a delightful crunch and tang to each bite. Adjust the spice level to your liking when preparing the spicy mayo, and don’t forget the fresh cilantro for that authentic Banh Mi experience. Enjoy!
