Ingredients

  • 1 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped cilantro
  • 1/4 cup grated carrots
  • 1/4 cup grated daikon radish
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon vegetable oil
  • Lettuce leaves, for wrapping
  • Fresh cilantro leaves, for garnish
  • Sriracha mayo (1/4 cup mayo mixed with 2 tablespoons Sriracha sauce), for dipping

Instructions

  1. In a large bowl, combine the ground pork, breadcrumbs, chopped cilantro, grated carrots, grated daikon radish, minced garlic, fish sauce, soy sauce, sugar, black pepper, and red pepper flakes (if using). Mix until all ingredients are well combined.
  2. Take small portions of the mixture and roll them into meatballs, about 1 to 1.5 inches in diameter.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the pork meatballs and cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through.
  4. While the meatballs are cooking, prepare your lettuce leaves and fresh cilantro leaves for wrapping.
  5. Once the meatballs are done, assemble your Vietnamese lettuce wraps. Place a meatball in a lettuce leaf, top with grated carrots, daikon radish, and fresh cilantro leaves. Drizzle with Sriracha mayo.
  6. Serve the lettuce wraps immediately with extra Sriracha mayo on the side for dipping.

Notes

Feel free to customize your lettuce wraps with other fresh herbs, such as mint or Thai basil, for added flavor. You can also adjust the level of spiciness by adding more or less Sriracha sauce to the mayo, depending on your taste preference. If you’re in a hurry, you can skip making the Sriracha mayo from scratch and use store-bought Sriracha mayo instead. Enjoy!
