  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 8 small flour tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 2 cups red enchilada sauce
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the vegetable oil over medium heat. Add the diced onions and cook until translucent.
  3. Stir in the minced garlic, chili powder, and cumin. Cook for an additional minute until fragrant.
  4. Add the shredded chicken and 1/2 cup of the enchilada sauce. Stir to combine and cook until heated through. Season with salt and pepper to taste.
  5. Warm the tortillas in the microwave or on a skillet until pliable.
  6. Spoon a portion of the chicken mixture onto each tortilla, roll them up, and place them seam-side down in a baking dish.
  7. Pour the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle with shredded cheese.
  8. Bake in the preheated oven for about 10-15 minutes or until the cheese is bubbly and slightly golden.
  9. Garnish with chopped cilantro before serving.

Notes

Use rotisserie chicken to save time, but feel free to cook your own chicken breasts or thighs if you prefer. You can also customize your enchiladas with extras like sliced black olives, diced tomatoes, or jalapeños for a kick. Do make sure to warm your tortillas before filling to prevent them from cracking. Make a double batch and freeze some for later – enchiladas are just as delicious when reheated. Enjoy!
