  • 2 boneless, skinless chicken breasts, diced

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for about 5 minutes until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  3. Add the mixed vegetables to the skillet and cook for 3-4 minutes until they are slightly tender.
  4. Push the vegetables to one side of the skillet and add the cooked rice to the other side. Pour the soy sauce and oyster sauce over the rice and stir everything together, combining the rice and vegetables. Cook for an additional 2-3 minutes to allow the flavors to meld together.
