  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup cooked white rice
  • 1 cup zucchini, grated and excess water squeezed out
  • 1 cup shredded cheddar cheese
  • 4 large eggs, separated
  • 1 cup milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch soufflé dish with butter and lightly sprinkle with flour.
  2. In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute until it forms a smooth paste.
  3. Gradually whisk in the milk and continue cooking until the mixture thickens, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a large mixing bowl, combine the cooked chicken, rice, grated zucchini, shredded cheddar cheese, garlic powder, onion powder, dried thyme, salt, and pepper.
  5. Beat the egg yolks in a separate bowl and then mix them into the chicken and rice mixture.
  6. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chicken and rice mixture, being careful not to deflate the mixture.
  7. Pour the mixture into the prepared soufflé dish and bake for 20-25 minutes or until the soufflé has risen and turned golden brown on top.
  8. Serve the soufflé immediately, as it will begin to deflate after it’s out of the oven.

Notes

Ensure that the zucchini is thoroughly drained before adding it to the mixture to prevent excess moisture in the soufflé. Be sure to use cooked and cooled rice, as hot rice may cause the eggs to curdle. For added flavor, you can sprinkle some grated parmesan or Gruyere cheese on top of the soufflé before baking.
