Ingredients

Units Scale
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 cups broccoli florets
  • 1/2 cup walnuts, roughly chopped
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Cooked rice or noodles for serving

Instructions

  1. In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, and cornstarch. Set the sauce aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until it’s no longer pink and slightly browned. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté until fragrant, about 30 seconds.
  4. Toss in the sliced onion and cook until it becomes translucent and lightly caramelized.
  5. Add the broccoli florets to the skillet and stir-fry for 2-3 minutes until they are bright green and slightly tender.
  6. Return the cooked chicken to the skillet and pour the prepared sauce over the ingredients. Mix everything well to coat in the sauce.
  7. Add the chopped walnuts to the stir-fry and toss to combine.
  8. Continue cooking for another 1-2 minutes until the sauce thickens, and all the ingredients are heated through.
  9. Serve the delicious chicken stir-fry over cooked rice or noodles, and enjoy!

Notes

For extra crunch and flavor, you can lightly toast the walnuts in a dry skillet before adding them to the stir-fry. Feel free to add more vegetables like bell peppers, snap peas, or carrots to make this dish even more nutritious and colorful if desired. For more tender veggies, stir fry for a few extra minutes. If you prefer a spicier stir-fry, add some red pepper flakes or a dash of Sriracha sauce to the sauce mixture. To make it a complete meal, consider serving the stir-fry with a side of steamed jasmine rice or udon noodles. Enjoy!
