  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas, rinsed and drained
  • 2 cups fresh spinach leaves
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan bread, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or pan over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pan and cook for another minute until fragrant.
  3. Stir in the ground cumin, ground coriander, turmeric, paprika, and cayenne pepper (if using). Cook for about 1 minute to toast the spices and release their flavors.
  4. Pour in the diced tomatoes with their juices and bring the mixture to a simmer. Add the rinsed and drained chickpeas and cook for about 10 minutes, allowing the flavors to meld together.
