Ingredients

  • 1 can (14.5 oz) tomato sauce
  • 1 can (4 oz) diced green chilies
  • 1/4 cup water
  • 1012 corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • Optional toppings: diced tomatoes, chopped cilantro, sour cream

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and sauté for 2-3 minutes until the onion is translucent.
  3. Add ground beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned, stirring occasionally.
  4. Add tomato sauce, diced green chilies, and water. Bring to a simmer and cook for 5-10 minutes until the sauce has thickened.
  5. Take a tortilla and place about 2-3 tablespoons of beef mixture in the center. Roll up the tortilla and place seam side down in a 9×13 inch baking dish. Repeat with the remaining tortillas and beef mixture.
  6. Pour the remaining sauce over the top of the tortillas, spreading it out to cover evenly.
  7. Sprinkle shredded cheese over the top of the sauce.
  8. Bake for 20-25 minutes until the cheese is melted and bubbly.
  9. Serve hot with desired toppings.
