  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and minced garlic. Sauté for 5 minutes, or until the vegetables are softened.
  2. Add the rinsed lentils, vegetable or chicken broth, bay leaf, ground cumin, paprika, dried thyme, salt, and pepper to the pot. Stir well to combine.

  4. Remove the bay leaf from the soup and taste for seasoning, adjusting with more salt and pepper if needed.
