Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 can kidney beans, drained and rinsed
- 1/2 cup small pasta (such as elbow or ditalini)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for about 3 minutes until fragrant and slightly softened.
- Add the diced carrots, celery, zucchini, and green beans to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables start to soften.
- Pour in the diced tomatoes and vegetable broth, and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld together.
- Add the drained kidney beans and small pasta to the pot. Continue cooking for an additional 8-10 minutes, or until the pasta is al dente.
- Stir in the dried basil and oregano, and season with salt and pepper to taste. Remove from heat.
Notes
Feel free to customize the vegetables based on your preferences and what you have on hand. You can add or substitute other vegetables like cabbage, bell peppers, or spinach. If you prefer a thicker soup, you can mash some of the cooked beans and vegetables using a potato masher or blend a portion of the soup in a blender before adding back to the pot. For a heartier version, you can add cooked diced chicken or crumbled Italian sausage to the soup. Serve the minestrone soup hot and garnish with freshly chopped parsley. It also pairs well with crusty bread or a sprinkle of grated Parmesan cheese on top. Enjoy!
