Instructions

  1. In a shallow dish, place the all-purpose flour. In another shallow dish, add the beaten eggs. In a third shallow dish, mix the panko breadcrumbs, shredded coconut, salt, black pepper, and cayenne pepper to create the breading.
  2. Coat each shrimp in flour, shaking off any excess. Dip the floured shrimp into the beaten eggs, allowing any excess to drip off. Press the shrimp into the coconut-panko mixture, ensuring they are evenly coated.
  3. In a large skillet, heat vegetable oil over medium-high heat. Fry the coconut-coated shrimp in batches for about 2-3 minutes per side or until they turn golden brown and crispy. Place the cooked shrimp on a plate lined with paper towels to absorb any excess oil.
  4. For the dipping sauce, in a small bowl, whisk together the mayonnaise, ketchup, Sriracha sauce, honey, lime juice, garlic powder, salt, and pepper until well combined.
  5. Serve the crispy coconut shrimp immediately with lime wedges on the side and the dipping sauce for an extra burst of flavor.

Notes

Feel free to adjust the level of spiciness in the cocktail dipping sauce by adding more or less Sriracha sauce. For a tropical twist, you can add a splash of pineapple juice to the cocktail dipping sauce. If you prefer a more tangy dipping sauce, increase the amount of lime juice.
