Ingredients
- 4 boneless, skinless chicken breasts, cubed

- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh spinach leaves
- Fresh basil leaves, for garnish
Instructions
- Season the cubed chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the cubed chicken breasts to the skillet and cook for about 12 minutes, flipping once, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and scrape the bottom of the skillet to deglaze it, picking up any browned bits of flavor.
- Reduce the heat to medium and stir in the heavy cream, grated Parmesan cheese, and sun-dried tomatoes. Cook for about 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in the fresh spinach leaves and cook for an additional 1-2 minutes until wilted.
- Return the cooked chicken breasts to the skillet and cook for an additional 2-3 minutes, allowing the chicken to heat through and absorb some of the flavors from the sauce.

Notes
When possible, look for sun-dried tomatoes packed in oil which provide a richer taste. Also, be cautious with salt in this recipe since the Parmesan cheese and sun-dried tomatoes already contain a lot of sodium. For a lighter version, you can substitute half-and-half or whole milk for the heavy cream. However, keep in mind that the sauce won’t be as thick and creamy.
