Chicken flautas are a delicious and easy-to-make Mexican dish that are perfect for a quick dinner or appetizer. Flautas are essentially rolled-up tortillas filled with seasoned chicken, then fried until crispy. They are typically served with a side of guacamole, salsa, and sour cream for dipping. Yum!

Ingredients

  • 810 small flour tortillas
  • 1 lb. boneless, skinless chicken breast, cooked and shredded
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup black beans
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. In a large mixing bowl, combine the cooked chicken, onion, bell pepper, black beans, cheese, chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  3. Warm up the tortillas in the microwave for about 20 seconds to make them more pliable.
  4. Scoop about 2-3 tablespoons of the chicken mixture onto each tortilla, then tightly roll up the tortilla around the filling.
  5. Once the oil is hot, carefully place the rolled-up tortillas seam-side down in the skillet, making sure they don’t touch each other.
  6. Fry the flautas for about 2-3 minutes per side, or until they are golden brown and crispy all over.
  7. Using tongs, remove the flautas from the skillet and place them on a paper towel-lined plate to drain off any excess oil.
  8. Serve the chicken flautas hot with your favorite dipping sauces.

Notes

If you don’t want to cook your own chicken ahead of time, feel free to grab a rotisserie chicken from your local grocery store and use that. Or if chicken isn’t your thing, you can easily swap in shredded beef or pork as well. I’ve found that these flautas make a great party snack or appetizer and can even be made ahead of time and reheated in the oven for a quick meal. Enjoy!
