Instructions

  1. Sauté Chicken (5 minutes):
    Heat the olive oil in a large skillet or paella pan over medium-high heat. Season the chicken pieces with salt and pepper, then sauté until browned and cooked through. Transfer to a plate and set aside.
  2. Cook Aromatics (5 minutes):
    In the same pan, add the onion and bell pepper and cook until softened. Add the garlic and cook for another minute until fragrant.
  3. Add Rice and Spices (2 minutes):
    Stir in the rice, smoked paprika, saffron if using, and turmeric until the rice is well coated with the oil and spices.
  4. Add Liquids and Chicken (20 minutes):
    Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce the heat to low. Add the browned chicken back into the pan, cover, and simmer for about 20 minutes, or until the rice is almost cooked through.
  5. Add Peas and Finish Cooking (5 minutes):
    Stir in the frozen peas (if using) and continue to cook until the rice is tender and the liquid has been absorbed. If the rice is not quite done but the liquid is absorbed, add a bit more broth or water and continue cooking until ready.
  6. Rest (5 minutes):
    Remove from heat and let the paella stand covered for 5 minutes to allow the flavors to meld.
  7. Serve (2 minutes):
    Fluff the paella with a fork, then serve hot with lemon wedges and a sprinkle of fresh parsley.
