  • 1 packet taco seasoning mix
  • 8 hardshell taco shells
  • 1 cup corn (fresh or frozen), cooked
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salsa, for serving (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the onions and cook for 3-4 minutes or until they begin to soften. Add the ground turkey and cook until it starts to brown, breaking it apart with a spatula as it cooks. Drain any excess fat.
