Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion and cook until softened and slightly golden, about 5-7 minutes.
  2. Stir in the garlic and ginger, and cook for another 1-2 minutes until fragrant.
  3. Add the ground cumin, ground coriander, ground turmeric, and cayenne pepper (if using) to the pot. Stir well to coat the onions and cook for 1 minute to release the flavors of the spices.
  4. Stir in the cubed eggplant, making sure it’s well-coated with the spice mixture. Cook for 5-7 minutes, stirring occasionally, until the eggplant begins to soften.
  5. Add the chickpeas, diced tomatoes, and coconut milk to the pot. Season with salt and pepper.
