Instructions

  1. Rub the inside of a cast iron pot with the halved garlic clove, then discard the garlic.
  2. In a bowl, combine the grated Swiss cheese and Gruyère cheese with the cornstarch, tossing to coat the cheese evenly.
  3. Pour the white wine and lemon juice into the cast iron pot and heat over medium heat until hot but not boiling.
  4. Gradually add the cheese mixture to the pot, stirring constantly in a figure-eight motion until the cheese is melted and smooth. This step should take about 5-7 minutes.
  5. If using, stir in the kirsch (cherry brandy) until well combined.
  6. Reduce the heat to low and keep the fondue warm and creamy, stirring occasionally, for serving.
