  • Cook Time: 20 minutes
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 large eggplant, cut into bite-sized cubes
  • 1 block firm tofu, pressed and cubed
  • 1 red pepper, thinly sliced
  • 1 cup teriyaki sauce
  • 3 cups cooked white rice
  • 23 scallions, chopped (for garnish)
  • 2 tablespoons oil (for cooking)
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. In a large pan, heat the oil over medium-high heat. Add the cubed tofu and eggplant. Cook until they start to brown, about 5-7 minutes.
  2. Pour the teriyaki sauce over the tofu and eggplant. Stir well to coat. Reduce the heat to medium and let it simmer for 5-7 minutes, allowing the flavors to meld and the sauce to thicken.
  3. Add the sliced red peppers to the pan and cook for an additional 2-3 minutes until they start to soften but still maintain their crunch.
  4. Season with salt and pepper to taste.
  5. Serve the eggplant and tofu teriyaki over a bed of cooked white rice. Garnish with chopped scallions and sesame seeds if desired.

Notes

To perfect this dish, make sure to press the tofu well to remove excess moisture before cooking. This ensures that the tofu will absorb the teriyaki sauce and develop a rich flavor. Additionally, you can marinate the tofu and eggplant in the teriyaki sauce for about 15-20 minutes before cooking for an even more intense flavor infusion. Feel free to adjust the thickness of the teriyaki sauce according to your preference – some like it thicker, while others prefer it lighter. Enjoy!
