Instructions

  1. Prepare the fudgesicle mixture (10 minutes):
    • In a medium saucepan over medium heat, combine the milk, heavy cream, sugar, cocoa powder, espresso powder, and a pinch of salt.
    • Cook, stirring continuously, until the mixture is well combined and just starts to simmer. Remove from heat.
    • Stir in the vanilla extract and let the mixture cool slightly.
  2. Fill the molds (5 minutes):
    • Pour the cooled mixture into fudgesicle molds. If you don’t have fudgesicle molds, you can use small paper cups and popsicle sticks.
    • Freeze until the mixture is just beginning to set (about 1 hour), then insert popsicle sticks. Continue to freeze until completely solid, approximately 4-5 hours or overnight.
  3. Prepare the garnishes (5 minutes):
    • When ready to serve, melt the semi-sweet chocolate chips in a microwave or over a double boiler until smooth.
    • Toast the shredded coconut in a dry skillet over medium heat until golden brown, being careful not to burn it.
  4. Unmold and garnish (5 minutes):
    • Run warm water over the outside of the molds for a few seconds to loosen the fudgesicles.
    • Carefully remove the fudgesicles from the molds.
    • Drizzle with melted chocolate and immediately sprinkle with toasted shredded coconut.
  5. Serve (1 minute):
    • Serve the fudgesicles immediately after garnishing, or place them on a baking sheet lined with parchment paper and return them to the freezer to set the chocolate drizzle for a few minutes.
