Instructions

  1. Preheat the oven (5 minutes):

    • Cook the sweet potato by roasting or boiling until tender. Let it cool slightly, then peel and mash until smooth. Measure 1 cup of mashed sweet potato and set aside.
  3. Mix the wet ingredients (5 minutes):
    • In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Beat until smooth and well combined.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and mashed sweet potato until fully incorporated.
  4. Combine the dry ingredients (5 minutes):
    • In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  5. Fold in the chocolate chips (optional) (2 minutes):
    • Gently fold in the semi-sweet chocolate chips, if using, until evenly distributed throughout the batter.
  6. Bake the brownies (25-30 minutes):
    • Pour the batter into the prepared baking pan and spread it out evenly.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Cool and serve (30 minutes):
