  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 1 small pineapple, peeled and sliced into rounds
  • 8 small flour tortillas
  • 1/2 cup chopped cilantro
  • 1/2 cup diced red onion
  • 1 cup salsa (store-bought or homemade)
  • Lime wedges, for serving
  • Salt and pepper, to taste
  • Olive oil, for grilling
  • Optional add-ons: diced tomato, jalapeno, avocado, grilled corn, etc

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Drizzle the pineapple slices with a little olive oil.
  4. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let them rest for a few minutes before slicing.
  5. Place the pineapple slices on the grill and cook for 2-3 minutes per side, or until they have nice grill marks and are caramelized. Remove from the grill and chop into smaller pieces.
  6. Warm the tortillas on the grill for about 30 seconds per side, or until they are lightly toasted and pliable.
  7. Assemble the tacos by placing sliced chicken, grilled pineapple, cilantro, and red onion on each tortilla. Top with salsa and squeeze fresh lime juice over the filling.
  8. Serve the grilled pineapple and chicken tacos with extra salsa, lime wedges, and any additional desired fixings.

Notes

Marinating the chicken in your favorite spices or a tangy barbecue sauce before grilling can add an extra layer of flavor. Adjust the level of spiciness by adding sliced jalapeños or a sprinkle of chili powder. You can also experiment with different types of salsa, such as mango or pineapple salsa, to complement the grilled pineapple. Serve the tacos with a side of Mexican rice, black beans, or a fresh salad for a complete meal. Don’t forget to squeeze fresh lime juice over the tacos before taking a bite to enhance the flavors!
