Ingredients

Units Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 small red onion, cut into chunks
  • 1 cup pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for added heat)
  • Salt and pepper, to taste
  • Skewers (if using wooden skewers, soak them in water for 30 minutes before grilling)

Instructions

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, cayenne pepper (if using), salt, and pepper. Stir well to create a marinade.
  2. Add the shrimp to the marinade and toss to coat. Allow the shrimp to marinate for 10-15 minutes to absorb the flavors.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp, red onion chunks, pineapple chunks, and bell pepper chunks onto the skewers, alternating between the ingredients.
  5. Place the kabobs on the preheated grill and cook for about 2-3 minutes per side, or until the shrimp is pink and cooked through.
  6. Remove the kabobs from the grill and let them rest for a few minutes before serving.

Notes

For best results, make sure not to overcook the shrimp to maintain their tenderness. You can also brush the kabobs with additional marinade while grilling for extra flavor. These kabobs pair beautifully with a side of steamed rice, a fresh salad, or grilled vegetables. Enjoy!
