This steak dinner salad features the bold flavors of grilled steak, crisp romaine lettuce, crunchy cucumbers, and tender grilled baby potatoes all tied together with a zesty homemade dressing. Served alongside smoky grilled corn on the cob, this salad will leave you satisfied and full.

Ingredients

  • 1 lb (450g) steak (e.g., ribeye, sirloin)
  • Salt and pepper
  • 1 large head romaine lettuce, chopped
  • 1 cup cucumber, sliced
  • 1 cup baby potatoes, halved
  • 2 ears of corn, husked
  • Olive oil (for grilling)
  • Optional toppings: crumbled feta cheese, grilled onion slices, fresh lime

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak with salt and pepper. Grill to your preferred doneness (about 4-5 minutes per side for medium-rare). Let it rest before slicing.
  3. Brush baby potato halves with olive oil and grill for 10-15 minutes, turning occasionally, until tender and charred.
  4. Brush corn with olive oil and grill for 10-12 minutes, turning occasionally, until charred.
  5. In a small bowl, whisk together the dressing ingredients until well combined.
  6. Assemble the salad: On a large platter, arrange chopped romaine lettuce, sliced cucumbers, and grilled baby potatoes.
  7. Slice the grilled steak and place it over the salad.
  8. Cut the grilled corn into smaller pieces and add to the salad if desired or just eat separately as corn on the cob.
  9. Drizzle the dressing over the salad, and add optional toppings if desired.
