  • 1 lb beef stew meat, cubed
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 1 cup barley
  • 1 cup frozen peas
  • 1 can (14 oz) diced tomatoes
  • 6 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat a bit of oil over medium-high heat. Add the cubed beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté for a couple of minutes until fragrant.
  3. Add the diced carrots and potatoes to the pot, and stir in the dried thyme. Sauté for a few minutes until the vegetables begin to soften.
  4. Return the browned beef to the pot, and add the barley, diced tomatoes (with their juice), and beef broth. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20 minutes, or until the barley is tender and the flavors have melded.
  6. Stir in the frozen peas and let them cook for an additional 5 minutes.
  7. Taste and adjust seasoning if needed. Ladle the soup into bowls, garnish with chopped fresh parsley, and serve.
