Ingredients

Units Scale
  • 1 lb ground beef or turkey
  • 4 cups low sodium beef or chicken broth
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 jalapeno, finely chopped
  • Fresh cilantro, chopped
  • 1/2 red onion, finely chopped
  • Sour cream, for topping
  • Tortilla chips, for serving

Instructions

  1. In a large pot, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  2. Add the pinto beans, black beans, diced tomatoes, and corn to the pot. Stir well to combine.
  3. Add the broth and bring to a boil. Once boiling, reduce the heat.
  4. Allow the soup to simmer for about 15-20 minutes, allowing the flavors to meld together.
  5. While the soup is simmering, prepare your garnishes: dice the avocado, chop the jalapeno, cilantro, and red onion.
  6. Serve the soup hot, ladling it into bowls. Top each bowl with diced avocado, chopped jalapeno, cilantro, red onion, a dollop of sour cream, and a handful of tortilla chips.
  7. Enjoy your delicious Taco Soup with all the wonderful toppings!

Notes

Feel free to customize the toppings based on your preference – add shredded cheese or a squeeze of lime juice for an extra burst of flavor. For a spicier kick, leave the seeds and ribs of the jalapeno intact. If you prefer a thicker soup, you can mash some of the beans against the side of the pot with a spoon to create a creamier texture. Enjoy!
