  • 8 slices prosciutto

Instructions

  1. In a mixing bowl, combine the all-purpose flour, salt, and baking powder.
  2. Make a well in the center and add the olive oil and water. Mix until the dough comes together.
  3. Knead the dough on a floured surface for about 5 minutes until it’s smooth and elastic. Then, cover it with a damp cloth and let it rest for 30 minutes.
  4. Divide the dough into four equal portions. Roll each portion into a thin, round flatbread, approximately 10-12 inches (25-30 cm) in diameter.
  5. Heat a skillet over medium-high heat. Place a flatbread in the skillet and cook for about 2-3 minutes on each side until it’s lightly browned and puffed up. Repeat for each flatbread.
  6. To assemble the sandwich, a bed of arugula on one half of the flatbread. Follow by several slices of tomato and fresh mozzarella.
  7. Lay two slices of prosciutto over the top.
  8. Fold the other half of the flatbread over the filling, creating a half-moon shape.
  9. Press gently to seal the edges and let the residual heat melt the mozzarella slightly.
  10. Slice in half and serve immediately.
