  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 pound beef sirloin, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon vegetable oil
  • 8 small tortillas
  • 1 cup slaw mix (cabbage and carrots)
  • 1 ripe avocado, sliced
  • Fresh cilantro, for garnish
For the dressing:
  • 1/4 cup mayonnaise
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sriracha sauce (optional)

Instructions

  1. In a bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger to make the marinade. Add the sliced beef to the marinade and let it sit for 10-15 minutes to absorb the flavors.
  2. Heat the vegetable oil in a skillet over medium-high heat. Add the marinated beef and cook for 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set it aside.
  3. In the same skillet, warm the tortillas for about 1 minute on each side until slightly toasted and pliable. Remove the tortillas from the skillet and set them aside.
  4. In a small bowl, whisk together the mayonnaise, rice vinegar, honey, and sriracha sauce (if using) to make the creamy dressing.
  5. To assemble the tacos, place a few slices of cooked beef on each tortilla. Top with slaw, avocado slices, and a drizzle of the creamy dressing. Garnish with fresh cilantro.

Notes

Choose thinly sliced beef for quick cooking and optimal tenderness. If the beef is not pre-sliced, you can partially freeze it for easier slicing. Marinate the beef for at least 10 minutes, but if you have more time, marinating it for longer will enhance the flavor. Adjust the spiciness of the creamy dressing by adding more or less sriracha sauce according to your preference. Customize the slaw by adding additional vegetables such as sliced bell peppers or shredded radishes for extra crunch and color. Serve the Korean Beef Bulgogi Tacos with a side of steamed rice or kimchi for a complete Korean-inspired meal experience. Enjoy!
