Instructions

  2. Cut the zucchini in half lengthwise and scoop out the flesh, creating hollow “boats.” Reserve the scooped-out flesh for later use.
  3. In a large skillet, cook the ground meat over medium heat until browned. Add the diced onion, bell pepper, and minced garlic, and sauté until the vegetables are tender.
  4. Chop the reserved zucchini flesh and add it to the skillet along with the diced tomatoes. Season with salt and pepper to taste. Cook for an additional 5 minutes until the mixture is well combined.
  5. Place the zucchini boats in the prepared baking dish and fill each boat with the meat and vegetable mixture. Top with shredded cheese.
