  • 1/2 cup dried apricots, chopped
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet or tagine over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.
  2. Add the chicken breasts to the skillet and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the ground cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper. Stir well to coat the onion and garlic with the spices.
  4. Return the chicken to the skillet, along with the diced tomatoes and chicken broth. Bring to a simmer, then reduce the heat to low and cover. Let it simmer for 15-20 minutes or until the chicken is cooked through and tender.
  5. Stir in the green olives and dried apricots, and cook for an additional 5 minutes to allow the flavors to meld together. Season with salt and pepper to taste.
