  • 1/2 cup ground flax seed
  • 1/2 cup peanut butter
  • 1/3 cup honey

  • 1/2 cup shredded coconut

  • 1 teaspoon vanilla extract
  • A pinch of sea salt

Instructions

  1. Mix the ingredients (10 minutes): In a large bowl, combine the rolled oats, ground flax seed, and shredded coconut. Add the peanut butter, honey, melted coconut oil, and vanilla extract. Mix well until everything is thoroughly combined. Stir in the chocolate chips and a pinch of sea salt.
  2. Form the energy bites (5 minutes): Use a spoon or cookie scoop to take portions of the mixture and roll them into balls about the size of a walnut. If the mixture sticks to your hands, wet them slightly with cold water before rolling.
  3. Chill (30 minutes): Chill in the refrigerator for about 30 minutes then serve and enjoy! For longer storage, keep the energy bites in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 1 month.
