  • 4 chicken drumsticks
  • 2 medium sweet potatoes, peeled and cut into bite-sized chunks
  • 2 medium apples, peeled and cut into bite-sized chunks
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine the chicken, olive oil, thyme, rosemary, garlic powder, salt, and black pepper. Toss until well coated.
  3. Arrange chicken drumsticks on a baking sheet and surround with sweet potatoes and apple chunks drizzling some olive oil over everything if needed. 
  4. Bake for 25-30 minutes, or until chicken is cooked through and sweet potatoes and apples are tender.
  5. Serve hot and enjoy!

Notes

For best results, try to keep the drumsticks and sweet potatoes and apples in a single layer to avoid overcrowding and promote even cooking. Feel free to add other root veggies like beets or carrots for additional flavor and nutrition.
