  • 1/4 cup sun-dried tomatoes, chopped

  • Fresh basil leaves, for garnish

Instructions

  1. Using a spiralizer or a julienne peeler, create zucchini noodles from the zucchinis. Set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the zucchini noodles to the skillet and sauté for about 2-3 minutes until they are just tender. Avoid overcooking to maintain a slight crunch.
  4. Remove the skillet from heat and stir in the basil pesto. Make sure the zucchini noodles are evenly coated.
  5. Gently fold in the chopped sun-dried tomatoes to distribute their flavors throughout the dish.
  6. Season with salt and pepper to taste. Remember that the pesto and sun-dried tomatoes also contribute to the overall flavor.
  7. To serve, divide the zucchini noodles among plates. Garnish with freshly grated Parmesan cheese and a few torn fresh basil leaves for an extra pop of color and fragrance.

Notes

For an added burst of protein, toss in some grilled chicken or cooked shrimp to the dish. You can also experiment with different types of pesto, such as spinach pesto or walnut pesto, to create unique flavor variations.
