Let’s begin!
- Prep Time: 40 minutes
- Cook Time: 90 minutes
- Total Time: 2 hours 10 minutes
- Yield: 6 servings 1x
Ingredients
For the prime rib:
- 1 (4-5 pound) boneless prime rib roast
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
For the garlic mash:
- 3 pounds Yukon Gold potatoes, peeled and quartered
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup unsalted butter
- Salt and pepper to taste
Instructions
- Prepare the Prime Rib (10 minutes):
Let the prime rib sit at room temperature for about 1 hour before cooking. Preheat your oven to 450°F (232°C). Rub the prime rib all over with olive oil. Mix salt, pepper, garlic powder, onion powder, thyme, and rosemary together in a bowl and rub this mixture evenly over the meat. - Roast the Prime Rib (Approx. 90 minutes):
Place the seasoned prime rib in a roasting pan or another oven-safe pan, fat side up. Roast in the preheated oven for 20 minutes, then reduce the oven temperature to 325°F (163°C). Continue roasting until the desired doneness is reached, about 15 minutes per pound for medium-rare. Use a meat thermometer to check for doneness: 135°F (57°C) for medium-rare. - Rest the Meat (20 minutes):
Once cooked to your liking, remove the prime rib from the oven. Cover it loosely with foil and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring it’s moist and flavorful. - Prepare the Garlic Mashed Potatoes (30 minutes):
While the prime rib is resting, boil the potatoes in a large pot of salted water until tender, about 20 minutes. In a small saucepan, melt the butter with the garlic and then add the cream, heating until just warm. Drain the potatoes and return them to the pot. Mash the potatoes, adding the garlic-butter-cream mixture gradually until the potatoes are smooth and creamy. Season with salt and pepper to taste. - Serve:
Slice the rested prime rib and serve alongside the garlic mashed potatoes. You can garnish the potatoes with a bit of chopped parsley or chives for added color and flavor.
