Instructions

  1. In a small bowl, combine the paprika, garlic powder, onion powder, cumin, salt, and black pepper. Rub the spice mixture evenly over the pork shoulder.
  2. Heat a large skillet or pot over medium-high heat. Add the seasoned pork shoulder and sear it on all sides until browned, about 3-4 minutes per side.
  3. Pour the barbecue sauce over the seared pork shoulder and reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally, until the pork is tender and easily shreds with a fork.
  4. While the pork is simmering, prepare the crunchy slaw by combining the shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a mixing bowl. Toss well to coat the vegetables in the dressing. Adjust the seasoning according to your taste.
  5. Once the pork is cooked and tender, remove it from the pot and shred it using two forks. Return the shredded pork to the pot and stir it in the barbecue sauce until well coated.
  6. To assemble the sandwiches, place a generous amount of the pulled pork onto the bottom half of each bun. Top it with a spoonful of the crunchy slaw. Cover with the top half of the bun and press gently to secure.
