Ingredients

Units Scale

For the waffles:

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 3/4 cups milk
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

For the roast beef and gravy:

  • 4 beef steaks (about 1/2 inch thick)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 cups beef broth
  • 2 tbsp cornstarch
  • Fresh chives, finely chopped (for garnish)

Instructions

  1. Start by making the waffle batter. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Slowly mix the wet ingredients into the dry ones. Make sure not to overmix; a few lumps are okay.
  3. Preheat your waffle iron. Once hot, pour in the batter (amount will depend on your waffle maker’s size) and cook according to its instructions. Typically, it should take about 5 minutes for each waffle to become golden brown and crispy. Set aside and keep warm.
  4. Season the beef steaks with salt and pepper.
  5. In a skillet, heat olive oil over medium-high heat. Add the steaks and sear for about 3-4 minutes on each side or until browned. Remove and set aside.
  6. In the same skillet, add beef broth. Mix cornstarch with 2 tbsp of water to form a slurry and add to the skillet. Boil, then simmer until the mixture thickens into a gravy.
  7. Return the steaks to the skillet, warming them in the gravy.
  8. Assemble by placing waffles on plates, layering with roast beef slices, and generously ladling over the gravy. Garnish with chives if desired.

Notes

For an extra touch, consider adding herbs or grated cheese to the waffle batter. Always ensure your waffle iron is well-greased to avoid sticking. The beef’s cooking time can be adjusted according to how well-done you prefer it. For a burst of freshness, serve with a side of mixed greens. For beverage pairings, consider a light-bodied red wine or a frothy stout.
