  • 1 pint cherry tomatoes

  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). On a baking sheet, spread the diced butternut squash in an even layer. Drizzle with olive oil, and season with salt and pepper. Roast the squash in the preheated oven for about 20 minutes or until tender and slightly caramelized.
  2. While the butternut squash is roasting, prepare the Lemon-Mint Yogurt Dressing. In a small bowl, whisk together the plain Greek yogurt, freshly squeezed lemon juice, chopped mint, and extra-virgin olive oil. Season with salt and pepper to taste.
  3. On another baking sheet, spread the cherry tomatoes and roast them in the oven for about 10 minutes until they begin to burst and release their juices.
  4. In a serving bowl, combine the roasted butternut squash, roasted cherry tomatoes, and chopped pecans. Cover bowl with plastic wrap and let sit in the fridge for at least 10 minutes to cool down. Once cooled, drizzle the lemon-mint yogurt dressing over the salad and toss gently to coat everything evenly. Garnish with fresh parsley if desired.
