Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the drained and rinsed chickpeas with olive oil, ground cumin, paprika, salt, and pepper.
  3. Spread the seasoned chickpeas on one side of a baking sheet. On the other side, place the halved cherry tomatoes.
  4. Roast the chickpeas and cherry tomatoes in the preheated oven for about 20 minutes until the chickpeas are golden and crispy, and the cherry tomatoes are slightly charred and softened.
  5. While the chickpeas and cherry tomatoes are roasting, prepare the rest of the salad ingredients. Dice the avocado and slice the carrots into coins.
  6. Once the chickpeas and cherry tomatoes are roasted, remove them from the oven and let them cool slightly.
  7. In a large salad bowl, combine the mixed greens, roasted chickpeas, roasted cherry tomatoes, diced avocado, and carrot coins.
  8. Toss the salad gently to combine all the ingredients. Add salt and pepper to taste.
  9. If desired, sprinkle crumbled feta cheese and chopped fresh herbs over the salad for added flavor and presentation.
